A Cheesy, Flavor-Packed Black Bean Quesadilla You Can Make in Minutes

This Tex-Mex–inspired black bean and three cheese quesadilla is ooey, gooey, and made right in your toaster. Loaded with melty cheese, beans, corn, and peppers, it’s a flavorful, mess-free twist on a classic that’s perfect for lunch, Cinco de Mayo, or any cheesy craving.

Equipment:

• Any Revolution Toaster
• The Toastie Press™

Ingredients:

• 1(12-inch) flour tortilla 
• 1/2 packed cup shredded three cheese Mexican blend
• 3 oz black beans
• 2 oz corn, canned or fresh
• 1/4 red pepper, diced
• 1 Tbsp. green onion
• 1/4 cup black olives
• 1 tsp. butter
• Salsa verde or sour cream for dipping

Cook it:

1. In a skillet over medium heat, melt the butter.
2. Add corn, onion, olives, and red pepper.
3. Cook until softened and fragrant, about 3–4 minutes.

Assemble it:

1. Lay the tortilla flat and sprinkle cheese into two opposite quadrants.
2. Top one cheese pile with the cooked veggie mixture and the other with green onion.
3. Fold one side of the tortilla to the center, then the other side.
4. Fold the bottom up to meet the top, then fold once more in the center to form a compact square.

Toast it:

1. Place the folded quesadilla in the Toastie Press, close and lock the handles, and wipe away any drips. 
2. Slide the press into the right slot of your Revolution Toaster (handles facing out) and toast using the Toastie Press Mode.
