The Un-Stuffed Toast

If you’ve ever wished you could turn your favorite Thanksgiving side into breakfast, this Stuffing Toast is your dream come true. Loaded with crispy sage, savory sausage, and a classic mirepoix, it takes everything comforting about traditional stuffing and piles it onto golden sourdough. A runny egg on top brings it all together, soaking into the herby, buttery juices for the ultimate fork-and-knife toast moment. It’s hearty, nostalgic, and ready in just 20 minutes—perfect for a holiday morning or anytime you need a little seasonal magic on your plate.

Equipment

Ingredients:

  • 2 tablespoons olive oil
  • 8 leaves of sage
  • 4 whole, and 4 chopped
  • 1/4 pound loose breakfast sausage
  • 2 carrots, minced or finely diced (1/4 cup minced carrot)
  • 2 ribs celery, minced or finely diced (1/4 cup minced celery)
  • 1/4 of a small onion, minced or finely diced (1/4 cup minced onion)
  • 2 tablespoons butter
  • 1 clove garlic, minced
  • 3 sprigs thyme, leaves removed from stems, chopped
  • 1/2 a chicken bullion cube, broken up/crumbled
  • 2 large slices sourdough
  • 2 large eggs

Directions:

Prep the filling: 

  1. Add 2 tablespoons of olive oil to a large frying pan over medium high heat. Add in the 4 whole sage leaves Cook until the bubbles stop and the sage is crispy. Remove from the pan to a paper towel.
  2. Add the sausage to the pan. Cook for about 5 minutes breaking up the sausage as it cooks into very small crumbles, until it starts to brown.
  3. Add the carrot, celery, and onion to the pan. Season with a small pinch of salt and cook about 3-5 minutes until softened.
  4. Turn heat to low. Add in the butter, garlic, and the chopped thyme and sage. Cook 2 minutes. Stir in the chicken bullion and cook until it melts into the sauce. Remove from heat.

Toast the vessel:

  1. We recommend using sourdough but you can use your favorite bread. 
  2. Toast your bread on the setting that corresponds with your bread choice. 

Assemble and Enjoy!: 

  1. Top your cooked vegetables and sausage on top of your toasted bread.
  2. Finish it off with a perfectly cooked sunny side up egg
