Sun-Dried Tomato Ricotta Grilled Cheese

Ingredients:

Ricotta Filling (makes enough for 2 sandwiches)

  • 1/2 cup ricotta cheese
  • 3 sun-dried tomatoes (from oil-packed jar), minced
  • 2 tablespoons chopped spinach (frozen, thawed, and dried well)
  • 1/2 teaspoon garlic powder
  • Pinch of salt

For 1 Sandwich

  • 2 slices sourdough bread
  • Mozzarella cheese (sliced or shredded)
  • Butter (for spreading)

Directions:

Make the Filling:

  1. Combine ricotta, sun-dried tomatoes, spinach, garlic powder and salt in a small bowl and mix until smooth. (This makes enough filling for two sandwiches—store the extra in the fridge for your next one.)

    Stack It:

    1. Place both slices of bread side by side.
    2. Put a slice of mozzarella cheese on each piece.
    3. Spread the ricotta filling over the cheese.
    4. Press the slices together, cheese on the inside.
    5. Lightly spread butter on the outside of both slices for an extra golden, crispy finish. (Optional)

    Toast It in the Revolution Toastie Press:

    1. Place the sandwich in the Toastie Press and lock the handles. Wipe any drips.
    2. Insert into the right slot of your toaster with handles facing out.
    3. Select Toastie Press Mode, choose your preferred doneness, and press Start.
