An Easy Grilled Chicken Quesadilla with Melty Cheese & Peppers

Juicy pulled chicken, melty Mexican cheese, and sautéed peppers and onions come together in this classic grilled chicken quesadilla—crispy on the outside, gooey on the inside, and made right in your toaster. Folded into the popular TikTok-style triangle shape, it’s a flavorful lunch, dinner, or game day snack that’s ready in minutes.

Equipment:

• Any Revolution Toaster
• The Toastie Press™

Ingredients:

• 1 (12-inch) flour tortilla
• ½ cup shredded Mexican cheese blend
• ¼ cup pulled chicken
• ½ yellow onion, thinly sliced
• ½ poblano pepper, diced (swap with bell pepper if preferred)
• 1 tsp. butter or olive oil

Directions:

Cook the ingredients:

1. Heat butter or olive oil in a skillet over medium heat. 
2. Add onion and poblano, cooking until softened and browned, 5–7 minutes.
3. Remove from heat.
4. Warm chicken in the microwave (1 min) or in a skillet over medium heat until heated through.

Assemble the quesadilla:

1. Place the tortilla flat and cut a single slit from the bottom edge to the center.
2. Divide fillings into four quadrants:
   1. Bottom left: chicken
   2. Top left: onion and poblano mix
   3. Top right: shredded cheese
   4. Bottom right: extra cheese (for melt + seal)
3. Starting from the slit, fold each quadrant over the next to form a compact triangle.

Toast it in the Revolution Toastie Press:
