Ingredients

  • 1 cup raspberry preserves
  • 1 tablespoon cornstarch
  • 1/4 teaspoon vanilla extract
  • 2 store bought pie crusts
  • Flour to dust surfaces
  • 1 egg
  • 2 tablespoons water
  • 1/2 cup powdered sugar
  • 1 tablespoon milk or cream
  • sprinkles

Bake

  • Mix the raspberry preserves in a bowl with the cornstarch and vanilla and set aside.
  • Preheat oven to 425
  • Unroll the pie crusts.
  • Dust the crusts with flour and roll them out a little so they become thinner and rounder
  • Slice the pie crusts into rectangles
  • Place a tablespoon of raspberry filling onto half the rectangles.
  • Whisk the egg and water together and brush the egg mixture onto the edges of the pie crusts with raspberry filling.
  • Place the other rectangles on top of the filled rectangles and press down the edges. Use a fork to crimp and seal the edges
  • Place on a baking sheet with parchment paper
  • Bake at 425 for 15 minutes.
  • Remove from oven and store in the fridge or freezer until ready to use

Freeze

Make sure to freeze them on a flat sheet with parchment paper not touching each other. Once frozen you can add them all into a zip top bag.

Toast

When ready to eat, place into the toaster on the frozen bread setting.

Stir the powdered sugar and milk together to make the glaze. Add more milk if too dry, and more sugar if too wet.

Glaze the tart and top with sprinkles.
